Reconstructed, deconstructed apple cake

Honestly, this cake should have failed. It was kinda sorta based on this http://theyellowhouseintheu.blogspot.dk/2013/05/maple-syrup-apple-cake.html in the loosest way possible. 

I didn't measure any of it (aside from the flour) so the following are indicative proportions...(is that even a thing?)

You'll need 2 apples. Don't even bother to peel them (though if you bought them in China wash them for goodness sakes!!) Slice them into...well slices.  Fry the apples in as much butter as you can afford to buy (remember I'm in China and butter is about $17 a knob). I would suggest about 2 tablespoons. Add a generous dash of brown sugar and cinnamon and caramelise. 

While that's all happening, in a bowl add:

2cups of all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda (I'm not sure why that is but just do it)
  • 3eggs
  • 1 cup of yoghurt 
  • 1 tablespoon pure vanilla extract
  • 1 stick butter, softened
  • 1 1/3 cups sugar
Mix the above by hand for about 90 seconds, because let's face it - I'm lazy.

  1. Preheat the oven to 160° C and butter a cake tin.
  2. Pour in batter and then place apples on top.
  3. Bake the cake for about 35-40 minutes
